π² Vegi-root soup π₯ + An unusual ingredient
A comforting vegetable soup accompanied by a side bowl of cheese. π§
Hey Soup Enthusiast,
During my holiday to France in August 2023, me and my family visited an independent restaurant called Le Troquet in Cancale, France. I enjoyed their food and highly recommend visiting them.
One of their standout meals for me was a fish soup starter served with a side bowl of cheese. I had never had cheese with soup before. The key, as I learned, is to sprinkle the cheese onto the spoon just before taking a bite. This prevents the cheese from becoming hard and stringy if mixed directly into the soup.
Now, let's turn our attention to today's soup.
π² Today's soup: Vegi-root soup
A comforting vegetable soup accompanied by a side bowl of cheese. This winter warmer can be turned into a satisfying dinner option. I hope you get a chance to taste it for yourself and send us your photos!

Here is how I would cook it in the future.
π Ingredients: Serves 4
olive oil
100g Smokey bacon
1 Large onion
150g Carrots
150g Turnip
150g Potatoes (Not too flowery)
150g Parsnip
150g Celeriac
1 Litre of Chicken or vegi-stock
Grated chedder cheese
Parsley
Recipe
Dice all the vegetables and bacon into small cubes
Add the bacon into the pot and cook gently with a small drop of oil
Add the diced onion and fry for about 10 minutes
Add the diced vegetables and fry for about 15 minutes
Pour in the stock and simmer for about 15 minutes to soften the vegetables
Garnish with parsley and serve with a side plate of cheese

Note π‘ - Do not put the cheese in the soup but sprinkle on the spoon before taking a bite. This soup would be a great dinner, consider adding pearl barley and serving with cheese on toast on the side to make it more substantial.

Better images for the Soup & Sauce newsletter
Last week I was talking about image file size and how much I have learnt over the last few weeks. In this email I am trying a larger file size which means the email may take longer to load but, the image quality is much better. Additionally, the photo is brighter which is what I wanted to achieve. Next week I am experimenting with the camera settings.
General improvements
I am still putting in the time to make the email and overall experience more engaging and better for the community. You may not see much difference yet but we need to add the ingredients before stirring the pot.
