Hey Soup Enthusiast,
I have a soup that tastes somewhat unique today. If you love low cost soups, packed full of flavor this vegan soup is for you.
🍲 Spicy red lentil and cabbage soup
Spicy red lentil and cabbage soup is low cost, full of flavor and the ingredients compliment each other nicely. The added coconut milk creates a uniqueness that makes this vegan soup stand out.

Creating this soup was easy.
Preparing the vegetables took me a bit longer due to my disability, but once that was done, the soup came together quickly.
Next it was time to cook the lentils before serving.
Heating the lentils took a while. I needed to stay present to stir the soup regularly ensuring the lentils didn’t stick to the bottom of the pot.
Once the lentils where cooked, it was time to dig in.
I enjoyed this soup so much, it is now one of my favorites.
The spice mix and the ingredients used complimented each other. I particularly enjoyed the cumin seeds and coconut milk which added a uniqueness to the flavor.
The cabbage and carrots stood out to me adding texture alongside the lentils. If you wanted a smoother soup you could blend it before adding in the cabbage.
This healthy vegans soup is a great low cost, comforting soup that creates a large amount. I would look forward to eating this soup any day of the year, especially in the summer!

🔴 Ingredient of the week: Red lentil
Fact - Just half a cup of red lentils contain 273 milligrams of potassium, this is a lot! Getting enough potassium in our diet can reduce the damaging effects of salt, and has been shown to lower blood pressure.
Cooking tip - There are many different types of lentils from black lentils which take on an earthy flavor to red lentils that become creamy and are good for spiced meals.

Better photography
I have been experimenting with light levels in my photos. Placing a tissue in front of the light does not make much of a difference. Therefore, I will continue to take pictured by placing a piece of paper behind the soup to reflect the light back to the camera.
General improvements
You may not see much difference yet but we need to add the ingredients before stirring the pot. If you have any suggestions, I would be delighted to hear them. 👍
