When you have a fridge full of vegetables, what soup would you make?

Today’s soup is just that.

A healthy, vegan recipe, perfect for using up the vegetables you have left in the fridge.

Before we dive in.

🍲 Spiced root soup

A healthy vegan soup packed with root vegetables that has a nice thick consistency and a tasty spice mix to give it an extra kick.

A perfect low cost soup for using up what’s left in the fridge.

Spiced root soup is packed full of root vegetables which is very healthy but, can take a while to prepare.

The preparation took up most of my time but, after the vegetables had been chopped, the soup was pretty much done.

The spice mix was my favorite part about creating and tasting this soup. You can use any curry powder or paste you like or create your own spice mix which is what I usually like to do.

For this soup I decided to use curry powder we had left over.

But, I couldn't help myself. I added a little paprika and crushed chillies to control the level of spice and add flavor.

I think spiced root soup is a winter warmer which is great for warming up on a cold day.

Overall it is a great way to use up the vegetables left in the fridge and experiment with spices.

🌱 Ingredient of the week: Leeks 

Fact - Leeks are high in fiber and low in calories. Some people believe in a "leek soup diet" for weight loss.

Cooking tip - Pick leeks that are firm, dark green and look healthy from the root to the tip. There should be no yellowing or brown spots and avoid leeks that are soft or mushy.

Our first news stories

I plan on bringing news from outside soup and sauce to the newsletter.

Personally I would preferer news centers around new soups added to restaurant menus and local places you can visit to taste soups and sauces.

I currently do not know how to do this well so I will stick to stories I can find easier for now.

Gordon Ramsay's £13 Million London pub unwillingly transformed into a soup kitchen for the homeless.

A group gained access to Gordon Ramsay’s, York & Albany pub which was for sale at a guide price of £13 million. They barricaded themselves in and despite Gordon's efforts, the Police wouldn’t intervene, calling it a "civil matter”.

The group who were living in the building, recently received legal documents forcing them to “cancel“ the soup kitchen they ran for the homeless, where they cooked free soup and coffee aiming to make a difference to the community.

A soup designed to protect endangered turtles

Turtle soup is a delicacy and consumed in some countries even though green-sea turtles are a protected species and are declining in population.

NotCo, a plant based food development company took on the challenge to create a turtle-free, turtle soup to prevent the decline in turtle population.

Using their own AI, specialised in plant based substitutes, they trained it about turtle meat. The AI then used this information to match possible plant based substitutes and came up with 8 different recipes.

After going back and for the with the AI and trying it’s suggestions, NotCo were satisfied with the recipe.

They took the turtle free, turtle soup to Peru where turtle soup was locally eaten and conducted a taste test with locals.

The feedback was positive and they are now on mission to share their turtle-free soup recipe to protect the turtles.

Improved photography 📷

I was playing around with the light levels when taking photos and by using a piece of paper to reflect the light back into the camera lens seemed to make the photo better.

I am still planning on testing lighting using tissues, so hopefully by next weeks email we should have the answer to whether I should use tissues intron of the light, paper behind the light or both.

General improvements

You may not see much difference yet but we need to add the ingredients before stirring the pot. If you have any suggestions, I would be delighted to hear them. 👍

What's your favorite root vegetable?

Last week we asked what your favorite way is to lift up a simple soup. We got quite the range of answers such as “Carefully with both hands“.

We are canners/freezers So I try to use as many of my own ingredients as I can One that is particularly good is “corn stock” When we cut corn off the cobs to freeze it, we simmer the cobbs for about 8 hours with some fresh herbs strain it and freeze it for soups We use it on its own for any soup calling for chicken stock. We just use some bouillon with it The corn stock is sweet and silky smooth. It adds an interesting depth of flavor to most any soup
I’m a chef and I’m not ashamed to admit that I’m completely addicted to fish sauce. You can boost the flavor of any savory dish with it.
Lemon juice 🖖I came to say vinegar. Acids do so much to make flavors pop.
Fish or oyster sauce....just a Tbsp gives umami to SO many things
