Hey Soup Enthusiast,
If you particularly enjoy roasted soups like I do, such as roasted pepper or roasted cauliflower, this soup is one you must put in your recipe book.
🍲Roasted broccoli soup
This tasty roasted broccoli soup has a creaminess that works well with the strong and tangy flavours. It is one of the quickest roasted soups I have come across. It has few ingredients yet, it is packed with a strong flavour of it's own.

With roasted cauliflower soup being one of the most popular soup recipes in the soup and sauce community, I decided to take some inspiration from it with this tasty roasted broccoli soup.
Preparing this soup took more time for me than other soups due to the leek being a little tricky for me to prepare and the roasting time for the broccoli. Although, roasting the broccoli is quicker than other roasted vegetables such as cauliflower as the broccoli only taking 20 minutes or less.
When I tasted the soup I instantly noticed the creaminess from the milk. It went well with the flavours, which I found to be similar to asparagus. They were also strong and tangy, which I enjoyed.
The texture was nice but, adding a bite from some almonds scattered over the top may work well and give the soup a more interesting aspect.

Fact - Broccoli is a powerhouse of nutrients, rich in vitamins C and K, fiber, and numerous antioxidants. It belongs to the cruciferous vegetable family, which is known for its cancer-fighting properties.
Cooking tip - If blending broccoli soup, be cautious not to over-purée. Blend until just smooth to maintain a bit of texture. Over-blending can make the soup too thick or gluey.
