🍲 Red lentil & chorizo soup

Red lentil and chorizo soup is a tasty, filling and hearty soup which I enjoyed. It has a nice texture and the added chorizo slices added and interesting element.

Red lentil & chorizo soup was not a difficult soup to make but, pealing the chorizo took me a while. Once the chorizo was pealed the soup came together relatively quickly.

It had a thick consistency, which was partly fault of me blending some chorizo accidently but, after adding a little waster and another stock cube the soup was at a nice consistency.

Before it was time to serve I tasted the soup and It was not so spicy. I decided to add another new ingredient, cayenne pepper. It made all the difference and I highly recommend using it to give an extra kick.

I really enjoyed this soup.

The lentils added a nice texture with the interest from the chorizo cubes and the spice mix adding flavor.

I highly recommend giving this one a go.

🌢️ Ingredient of the week: Chorizo 

Fact - Chorizo comes in many flavors: smoky Spanish, chili-spiced Mexican, garlicky Portuguese, and even Cajun Loui.

Cooking tip - Make sure to remove the wrapping around the chorizo. Chorizo has a lot of oil which is released, cook your other ingredients in it to add flavor.

Last week I asked what was your favorite soup memory, this is what you said.

Turkish lentil soup. We flew to Istanbul a few years back, I get horribly travel sick so the flight and transfer to the hotel just about wiped me out. Husband is diabetic so we had to go and find some food, found a nice little restaurant near to the hotel and I said I didn't want anything more than a coke. I must have looked wiped out because the next thing I know a steaming bowl of lentil soup was placed in front of me. It was everything, savoury, hint of mint, lemon and a small amount of sizzling spiced butter on top. Perked me right up. Istanbul was amazing, well worth the initial journey.
My partner and I go out for pho every year on December 26th. It’s a great way to decompress from the holidays and to support a small business. This year will be the 10th year in a row!
Dead winter. Cold, snowy and the roads are closed. Mom throws a bunch of leftovers in a pot, adds water, bullion and half the spices in her spice rack, and lets it simmer for 2 hours, only putting her book down twice to stir it. B 3 o’clock she sets the table and yells β€œSoup’s on!” Best thing I’ve ever eaten and she can’t remember what she put in it. 1982, btw.
