🍲 Leek and potato soup + Short video
An easy and speedy veggie soup to create.
Hey Soup Enthusiast,
I am excited to be releasing our first Christmas special next Friday. Make sure to send in your Christmas soup and sauce ideas if you want to be featured in next weeks special. Here is a prompt question for you all to get involved.

Before you let us know, lets take a look at this weeks soup.
🍲 Today's soup: Leek and potato soup
This tasty leek and potato soup is an easy and speedy soup to create because of it’s minimal ingredients and a simple method.

Here is how I would cook it in the future.
📝 Ingredients: Serves 4
Butter
450g Potato’s pealed and chopped small
1 Small onion
450g (2) Leeks
850ml Chicken or veggie stock
1 Tablespoon of crème fraîche
1 Teaspoon of mace
Chives to serve
Recipe
Cook the potato’s, leeks and onions in butter until coated.
Add salt and pepper.
Cook on a gentle heat for about 12 to 15 minutes.
Add the stock and simmer for about 5 minutes.
Make sure the potato’s are cooked and then blend.
Add 1 tablespoon of crème fraîche and Mace.
Serve with chives.
Note 💡 - Season with a generous amount of pepper to serve to add extra flavor.

With leek being one of the dominant flavors I have chosen it as the ingredient of the week. I challenge you use a leek or two in your cooking this week. Food Fact - Leeks belong to the same family as onions, shallots, scallions, chives, and garlic. They originally come from central Asia.

Last week I mentioned I would be using a smaller lens to make the picture brighter. I am glad to say this has worked but, unfortunately it is still a little dark because after being away in Keswick over the weekend I have misplaced my camera charger and didn’t have sufficient battery to set up the camera properly.

This is one of my best a pictures from my trip to Keswick if you are interested.

🍜 P.S. Soup hack alert!
Make sure to cut the potatoes a similar, small size to ensure they all cook at the same time to avoid getting potatoes which are still hard and difficult to blend. 😉
