Welcome to the start of the new and improved soup and sauce newsletter!

With pumpkin at the top of our menu and the cold drawing in, what better soup to make than pumpkin soup.

 

🍲 Spiced pumpkin soup πŸŽƒ

Spiced pumpkin soup is a quick and easy halloween treat to make with subtle flavours from the spice mix. It has a smoothness from the coconut milk without being overly creamy and an addition of roasted pumpkin seeds as a garnish would bring on an extra crunch.

This seasonal soup was one of the quickest soups I have made, there was so little to prep and the only chalanging part of creating the pumpkin soup for me was hollowing out the pumpkin and scooping out the the flesh.

Luckely hollowing out he pumpkin can be done in advance. I was surprised how much pumpkin I got out of it. There is so much for the soup!

Unfortunetly, I did struggle a bit and left a few holes in the back of the pumpkin while trying to take out a much pumpkin as I could.

So don't make the pumpkin too thin if you plan to carve it.

Decorating and garnishes

Pumpkin soup has a bright orange collor which I think is complimented by adding a handfull of seeds over the top and crutons work well if you are after an extra cruch. If you prefire a creamier soup a swirl of crem-fresh can create a nice contrast to the bright orrange color.

On to the taste test

Pumpkin has never been my favorite food but, I liked this soup. The spice mix is subtle and compliments the pumpkins flavour nicely. I found black pepper went realy well with the flavours adding a new element which was needed.

If I am to make spiced pumpkin soup again, one thing which I think would make this soup much more tasty would be to roast the pumpkin for a huge boost in flavour and make the pumpkin stand out more from the spice mix, which took on most of the flavouring.

The coconut milk which I addded at the end didn't make the soup overly creamy but, it gave it a smooth texture that I enjoyed. However, next time I would definetly roast the pumpkin seeds and add them to the top as a garnish for some extra crunch and decoration.

Fact - Did you know in the past pumpkins were not used in England to create Jack-o'-lanterns and they were broght into fashon from when Irish imigrents introduced them to Amarica. In Ireland, people originally carved turnips or root vegetables, inspired by a folktale about a man who carried a glowing, carved-out turnip in the afterlife. Pumpkins became popular later for being easier to carve and widely available.

Im sure some of you have made your own pumpkin soup. Or posibly you may have made another type of halloween soup or sauce.

Pumpkin cooking tip - Don't throw away the seeds! Wash them and bake them on an a medium heated over for about 10 minutes until lightly toasted, then use them to garnish soups or salads, you could even enjoy as a snack.

More ways to get in touch with the comunity and share your soup creations

Bringing the comunity together is one of my main focuses. I realise we all use diferent social platforms so I wanted to let you know how you can easaly leave a comments on our newsletter or website so you can inteact with the comunity.

One we all know how to do is hit reply on the bottom of any of the emails you recive. This will allow you to send a private email directly to me.

You may have seen a new speach mark shapeed button on the top left of this email. This will take you dieectly to the online version of this email where you can leave a comment for all to see.
