I have a really tasty, simple soup for you today which is low cost and so full of flavor it is one of my favorites.

Garlic and lentil soup is a simple, tasty vegan soup that is just the right mix of flavors. The garlic shines through and is perfectly complemented by the onion and carrots. This filling soup is one to try.

Garlic and lentil soup

Creating garlic and lentil soup was very easy.

Without many ingredients and also, being so easy to prepare, I had no trouble at all.

The most time-consuming part was simmering and waiting for the lentils to cook. I had to stir the lentils often to prevent them from sticking to the bottom of the pan.

I found and adapted this recipe from a book which was recently gifted to me, it has a lot of interesting soups that look very tasty so expect some more interesting soups to come! Thank you for the gift. :)

I enjoyed this soup.

The soup had a thin consistency but, the garlic added so much flavor to the liquid. The garlic was the most prominent flavor, which I really enjoyed. It paired beautifully with the subtle sweetness of the onions and carrots.

It could be made thicker by blending but, I enjoyed the texture added by the lentils and vegetables.

Last week I asked you what your your favorite unusual soup is, here is what you said.

Daikon Soup. It's my low carb version of potato soup. Very rich and mimics potato soup nicely. Next would be Mushroom Brie Soup.

Daikon and red radishes are related, yet they have some differences. For example, their taste. Daikon radishes have a subtly sweet flavor, making them milder compared to the peppery bite of red radishes.

My creamy diakon soup this morning had ham cubes and extra old cheddar buried in the bottom. Enjoy!

Creamy Potato Soup (Daikon) Daikon is very close in taste and texture as potatoes minus the carbohydrates. Half a cup of daikon has 2.9 net carbs.

Ingredients

2 TBSP butter

β…› cup chopped onion

1 clove garlic peeled and minced

2 cups chicken bone broth are better than bouillon chicken

1 Β½ cups cubed daikon

Β½ tsp Kosher salt

Β½ tsp Fresh cracked pepper

Β½ cup heavy cream

Directions

Saute the onion and garlic in a soup pot. Add in the bone broth, better than bouillon, daikon, salt and pepper. Bring to a boil and simmer for 30 minutes.

Stir in the cream. Whizz the soup to desired consistency. Adjust for salt and pepper to taste.

If you would like it thicker, sprinkle a small amount of xanthan gum and stir in to thicken. Heat the soup once again and serve hot. Top with shredded cheddar and bacon bits. Garnish of your choice… parsley, green onion?


Here is the community members own β€œMushroom Brie soup” recipe!

Mushroom Brie Soup

Makes 4 servings

Rich hot mushroom soup with a brie surprise is low in carbs and a perfect appetizer.

Ingredients

3 TBSP butter

1, 8 ounce package mushrooms sliced

2 TBSP onion chopped

1 clove garlic minced

3 cups chicken bone broth

1 cup heavy cream

1 stalk fresh thyme

Salt and pepper to taste

Xanthan gum

Garnish: Sliced brie to taste Chopped parsley

Directions

In a Dutch oven, melt the butter over medium heat. Saute the onion, mushrooms and garlic. Pour in the broth. Puree until smooth. Add in the thyme stalk and bring to a boil. Simmer for about 10-15 minutes to bring out the flavours.

Remove and discard the thyme stalk. Add in the heavy cream and bring to a boil, simmer for 10 minutes. Adjust for fresh cracked pepper and salt to taste. If you would like it thicker, stir in a little xanthan gum.

Serve in a warmed onion soup bowl. Nestle sliced brie in the bottom of the bowl and ladle the hot mushroom soup on top.

Garnish with parsley or fresh chopped thyme.

Notes: cremini and button mushrooms are perfect for this soup.

Avgolemono! It’s Greek chicken and egg soup with orzo and lots of lemon.

Here is a creative unusual soup for you to try!

 Unicorn soup which is a bright purple soup made with purple sweet potato. I have to try really hard not to adulterate it with other veg because it ruins the colors (purple carrots, beets and purple cabbage do that too. I have tried everything I can think of to add more variety). Does really good with Indian spices to complement the sweetness too. ProvenΓ§al garlic soup but I use way more garlic then is typical. Lots of garlic turns it from a thin soup to creamy. I usually only make it during garlic harvest because the stored garlic the rest of the year doesn't taste as good. Usually a mix of purple and regular garlic.

How about this soup?

My favorite unusual soups are Filipino. So not very unusual to my culture, but definitely unusual to my non-Filipino friends! My favorite soup is sinigang na baboy which is a sour (from tamarind) soup with lots of veggies and pork. Another favorite is a stew called kare kare, which has a thick peanut sauce with oxtail, tripe, and veggies.
