Today I have a tasty vegan soup that is so easy to make.

🍲 Courgette soup

Courgette soup is a tasty, light, vegan soup that has a nice texture from the courgette. The courgette is very prominent in the flavor and is quick to make.

Creating courgette soup was very easy and quick. I had no trouble with prepping any of the ingredients and overall it was one of the easiest soups I have made.

I decided to fry the courgette and add it in at the end when the soup was ready to serve, This made a huge difference to the texture.

The courgette had a slight crunch and it was very tasty.

When it was time to eat, I decided to blend half the courgette as there was a lot.

This added a nice texture through the soup and helped the soup flavor.

Overall, this tasty vegan soup is worth giving a go yourself. It created a large amount and with minimal ingredients it is so easy to make. :)

Fact - Courgettes are full of antioxidants and they grow on plants which have yellow flowers which are also edible.

Cooking tip - Instead of boiling, courgettes can be fried to brown, adding flavor and texture.
