🍲 Cauliflower and cannellini bean soup
An easy vegan soup with a nice texture.
Hey Soup Enthusiast,
I hope you are having a good day and are ready for the weekend.
I have a healthy soup for you today.
🍲 Cauliflower and cannellini bean soup
Cauliflower and cannellini bean soup was a tasty and easy vegan soup to make which has a nice texture and thickness from the cannellini beans. The cauliflower would add a lot of flavor if roasted.

Creating cauliflower and cannellini bean soup took me a little longer than other soups.
I had no trouble with the preparation.
The ingredients where really quick and easy to prepare but, it took 40 minuets in total to fry the cauliflower in two batches.
20 minuets per batch of cauliflower!
As it takes about 40 minuets to roast cauliflower, I would highly recommend you roast your cauliflower apposed to frying.
The flavor roasting adds is really worth it.

The beans added a nice texture and creaminess to the soup. The texture and thickness they added was lovely as well.

🌿 Ingredient of the week: Cauliflower
Fact - Cauliflower is high in vitamin C which is good for skin, healing, and gum health.
Cooking tip - Leave space between florets to reduce steam and help crisp up the florets while roasting in the oven or frying in the pan. :)

“Cullen Skink Soup
1. Slowly sweat chopped onion in butter till soft but not brown.
2. Add peeled and chopped potatoes with whole milk and vegetable stock cube
3. Simmer until potatoes are almost cooked.
4. Add skinned and cubed smoked haddock.
5. Bring back to the boil. Reduce heat and simmer for 5 minutes .
6. Add chopped parsley and taste for seasoning . It may not require any extra salt or pepper due to the smoked fish.
**Delicious with a glass of Sancerre Blanc.“
