Today I have a really tasty soup for you that you absolutely must try.

I hope you have been enjoying the whether (while it lasted), I certainly have been. 🌞

With all this cooking, I have learnt so much I have improved my prepping speed, tips, tricks and techniques.

One of my favorite tips I have learned is to sauté / fry your vegetables in a small amount of butter on a high heat until they soften to bring out more of the flavors.

Not the healthiest but, it does add a lot.

Today I have a really tasty soup for you that you absolutely must try.

It is a vegetarian soup packed full of flavor, let’s take a look.

🍲 Carrot and leek soup

Carrot and leek soup is a really tasty vegetarian soup that only uses a handful of ingredients. It made so much, I had to add more stock and water than I expected to achieve the perfect consistency.

I chose this soup because of the small amount of ingredients needed and there where a lot of carrots in the fridge to be used.

Peeling the carrots took me a long time. There where so many of them!

Once carrots where ready, next was the leek.

In the past I struggled preparing leeks but, I am much faster now.

Something I didn’t expect was how good the star anise is at hide and seek. I did eventually find it swimming in the soup so I could remove it before blending.

This soup is packed with flavor!

The carrot is most prominent and complimented by the subtle taste from the leek. The star anise flavor is there but, not as prominent as the other flavors.

Carrot and leek soup definitely is one of the tastiest soups I have made and definitely one to try yourself.

Ingredient of the week: Star anise 

Fact - Star anise adds a sweet-licorice-peppery flavor and is common in in the Chinese “5 spice” and Indian “Garam Masala” blends.

Cooking tip - Whole star anise pods are great for simmering in soups or stews, while ground star anise powder is more convenient but, loses flavor over time.

🌍 Beyond the ladle: Soup news highlights

With the sun shining so bright outside, I was eager to find out how it effected the pictures I took.

Natural light is known as one of the best light sources for photography and it held true for me. The photos taken in natural light are so much better and easier to edit as a bonus.

I have also learned about a new editing feature which I will try out next week for a better color and brightness of the photo.

NHS soup and shake diet

The NHS is tackling type 2 diabetes with an 800-calorie-a-day "soup and shake" diet. They aim to help 10,000 individuals per year permanent reverse type 2 diabetes. Studies led by the University of Leeds have show an average weight loss of 10kg within a year.

General improvements

You may not see much difference yet but we need to add the ingredients before stirring the pot. If you have any suggestions, I would be delighted to hear them. 👍

Cabbage roll soup! When I was a kid my mom would slow-braise cabbage rolls in the oven all day and when the casserole dish we had was full up, she’d take the remaining ingredients and throw them in a pot on the stove. That leftover soup concoction is something I now make regularly without even bothering to make actual cabbage rolls and it’s my favourite. Tomato juice, canned diced tomatoes, ground beef, cabbage, onions, garlic, and beef broth.
